- 2 chicken breasts
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 2 cups spinach
- 1 avocado
- 1 lime
Instructions
- Preheat oven to 400°F (200°C).
- Peel and dice sweet potatoes.
- Toss sweet potatoes with olive oil, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- Season chicken breasts with salt and pepper.
- In a skillet, cook chicken over medium heat for 6-7 minutes on each side until cooked through.
- In the last few minutes of cooking, add spinach to the skillet until wilted.
- Slice avocado and lime.
- Assemble bowls with chicken, sweet potatoes, spinach, avocado, and a squeeze of lime.
