Description
A hearty chicken barley soup that warms you up.
Ingrédients

- 1 cup pearl barley
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the pearl barley under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and add barley, chicken, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper.
- Remove bay leaf and serve hot, garnished with parsley.
Notes
- Store leftovers in the fridge for up to 3 days.
- This soup freezes well.
