Description
A refreshing chicken couscous salad packed with flavor.
Ingrédients

- 1 cup couscous
- 1.5 cups water
- 2 chicken breasts, cooked and diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- In a saucepan, bring water to a boil.
- Add couscous, cover, and remove from heat.
- Let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine cooked couscous, chicken, tomatoes, cucumber, onion, parsley, and feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- This salad can be made a day ahead for better flavor.
