Ingrédients

  • 2 chicken breasts, cooked and diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a saucepan, bring water to a boil.
  2. Add couscous, cover, and remove from heat.
  3. Let it sit for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine cooked couscous, chicken, tomatoes, cucumber, onion, parsley, and feta.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over salad and toss to combine.
  7. Serve chilled or at room temperature.
