- 2 cups cooked shredded chicken
- 8 corn tortillas
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1 tablespoon olive oil

- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a pan and sauté onions until translucent.
- Add shredded chicken, garlic powder, chili powder, and salt; mix well.
- Warm tortillas in a skillet until soft.
- Fill each tortilla with chicken mixture and roll them up.
- Place rolled tortillas in a baking dish.
- In a bowl, mix sour cream and cream of chicken soup; pour over the enchiladas.
- Sprinkle shredded cheese on top.
- Bake for 25 minutes or until cheese is bubbly.
- Serve warm.
