A delicious chicken fajita rice casserole that combines flavorful chicken, rice, and fajita spices.

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 2 tablespoons fajita seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the chicken until no longer pink.
- Add the bell pepper, onion, and fajita seasoning. Cook until vegetables are tender.
- In a large bowl, mix cooked rice, black beans, corn, salsa, and chicken mixture.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Feel free to add more vegetables.
- You can substitute brown rice for white rice.
- Adjust seasoning to your taste.
