Description
A delicious chicken scampi served with garlic parmesan rice.
Ingrédients

- 2 chicken breasts
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1/4 cup butter
- 1/4 cup olive oil
- 1 cup chicken broth
- 1 cup rice
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil and butter in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Season chicken breasts with salt and pepper, then add to the pan.
- Cook chicken until browned on both sides.
- Pour in white wine and chicken broth, simmer until chicken is cooked through.
- Remove chicken and let rest, then slice.
- In another pot, cook rice according to package instructions.
- Stir in parmesan cheese and season with salt and pepper.
- Serve chicken over rice, garnished with parsley.

- For extra flavor, marinate chicken in garlic and olive oil for an hour before cooking.
- Use low-sodium chicken broth for a healthier option.
