Description
A hearty chicken sweet potato and lentil curry packed with flavor.
Ingrédients

- 1 lb chicken breast, diced
- 2 sweet potatoes, peeled and diced
- 1 cup lentils, rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 cups chicken broth
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and ginger. Sauté until onion is translucent.
- Add chicken and cook until browned.
- Stir in sweet potatoes and lentils.
- Add chicken broth, coconut milk, and curry powder. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Serve hot.

- Adjust spice level by adding chili powder if desired.
- Serve with rice or naan for a complete meal.
