Description
A healthy and flavorful wrap filled with chili lime chickpeas and roasted cauliflower.
Ingrédients

- 1 cup chickpeas, drained and rinsed
- 1 cup cauliflower florets
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon lime juice
- Salt to taste
- 4 large whole wheat wraps
- 1 cup lettuce, shredded
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chickpeas, cauliflower, olive oil, chili powder, lime juice, and salt.
- Spread the mixture on a baking sheet.
- Roast for 20-25 minutes until cauliflower is tender.
- Warm the wraps in a skillet for 1-2 minutes.
- Assemble the wraps with roasted chickpeas, cauliflower, lettuce, tomatoes, and cilantro.
- Roll up the wraps and serve.
Notes
- Adjust the spice level by adding more chili powder if desired.
- Use fresh lime for best flavor.
- Store leftovers in an airtight container in the fridge.
