Instructions
- Melt the chocolate in a bowl over simmering water.
- Separate the eggs, placing the yolks in one bowl and the whites in another.
- Whisk the egg yolks with sugar until pale.
- Add the melted chocolate and vanilla to the yolk mixture.
- Whip the cream until soft peaks form.
- Fold the whipped cream into the chocolate mixture.
- Beat the egg whites until stiff peaks form and gently fold into the mixture.
- Spoon the mousse into serving dishes and chill for at least 2 hours.
