Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk eggs and vanilla until combined.
  4. Combine wet and dry ingredients until smooth.
  5. Spread batter on a lined baking sheet.
  6. Bake for 15 minutes.
  7. Once baked, roll the cake in a towel to cool.
  8. Whip heavy cream with powdered sugar and peppermint extract.
  9. Unroll the cooled cake, spread cream, and re-roll.
  10. Chill for 1 hour before serving.
  11. Decorate with sprinkles.
