- 3 large eggs

- 1/2 teaspoon peppermint extract

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, whisk eggs and vanilla until combined.
- Combine wet and dry ingredients until smooth.
- Spread batter on a lined baking sheet.
- Bake for 15 minutes.
- Once baked, roll the cake in a towel to cool.
- Whip heavy cream with powdered sugar and peppermint extract.
- Unroll the cooled cake, spread cream, and re-roll.
- Chill for 1 hour before serving.
- Decorate with sprinkles.
