- 1 cup of green beans, trimmed
- 1/2 cup of cranberries
- 1/4 cup of walnuts, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss Brussels sprouts and sweet potatoes with olive oil, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast in the oven for 25 minutes.
- Add green beans and cranberries and roast for an additional 10 minutes.
- Remove from the oven and sprinkle with walnuts before serving.
