Ingrédients
- Brussels sprouts – 500g
- Carrots – 300g
- Parsnips – 300g
- Green beans – 200g
- Olive oil – 3 tablespoons
- Salt – to taste
- Pepper – to taste
- Garlic – 2 cloves, minced
Instructions
- Preheat your oven to 200°C (400°F).
- Wash and prepare all vegetables.
- Cut Brussels sprouts in half, peel and chop carrots and parsnips, and trim green beans.
- In a large bowl, toss all vegetables with olive oil, salt, pepper, and minced garlic.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes until tender and slightly caramelized.
- Serve hot as a side dish for your Christmas dinner.
