A selection of festive dishes perfect for a Christmas lunch in South Africa.
Ingrédients

- 1 whole leg of lamb, about 2 kg
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 cup red wine
- 2 cups mixed vegetables (carrots, potatoes, green beans)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup cranberry sauce
Instructions
- Preheat your oven to 180°C (350°F).
- Rub the leg of lamb with garlic, rosemary, salt, and pepper.
- Heat olive oil in a large pan and sear the lamb on all sides.
- Place the lamb in a roasting pan and pour red wine over it.
- Add mixed vegetables around the lamb.
- Cover with foil and roast for 1.5 hours.
- Remove the foil and roast for another 30 minutes until golden brown.
- Let the lamb rest for 15 minutes before slicing.
- Serve with cranberry sauce.
Notes
- Serve with a fresh garden salad.
- Pair with a light white wine.
- Leftovers can be used in sandwiches.
