  • 1 whole leg of lamb, about 2 kg
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 cup red wine
  • 2 cups mixed vegetables (carrots, potatoes, green beans)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cranberry sauce

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Rub the leg of lamb with garlic, rosemary, salt, and pepper.
  3. Heat olive oil in a large pan and sear the lamb on all sides.
  4. Place the lamb in a roasting pan and pour red wine over it.
  5. Add mixed vegetables around the lamb.
  6. Cover with foil and roast for 1.5 hours.
  7. Remove the foil and roast for another 30 minutes until golden brown.
  8. Let the lamb rest for 15 minutes before slicing.
  9. Serve with cranberry sauce.
