Delicious churro cheesecake donut cookies that combine the flavors of churros and cheesecake in a soft cookie.

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup cream cheese, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup cinnamon sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix butter, cream cheese, and sugars until smooth.
- Add the egg and vanilla extract, and mix well.
- In another bowl, combine flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients.
- Shape the dough into small balls and roll them in cinnamon sugar.
- Place the dough balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool before serving.
