Description
Delicious churro cupcakes topped with creamy cinnamon cream cheese frosting.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda

- 1 tsp ground cinnamon
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp ground cinnamon (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each cupcake liner with the batter about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat the cream cheese until smooth, then add powdered sugar and cinnamon. Mix until well combined.
- Frost the cooled cupcakes with the cinnamon cream cheese frosting.
Notes
- Store cupcakes in an airtight container.
- Frosting can be made ahead of time and refrigerated.
- Feel free to add more cinnamon to the frosting for extra flavor.
