A fresh and flavorful cilantro lime rice bowl that is easy to prepare.
Ingrédients

- 1 cup white rice
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 18 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork.
- Stir in olive oil, lime juice, and cilantro.
- Season with black pepper to taste.
Notes
- Serve warm or at room temperature.
- Top with your choice of protein or vegetables.
- Store leftovers in the refrigerator for up to 3 days.
