- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon cloves
- 1/4 cup sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil.
- Add eggs to the mixture and stir well.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, salt, and cloves.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Fill muffin cups with batter.
- Mix sugar and cinnamon for topping and sprinkle on the muffins.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
