Ingrédients

  • All-purpose flour: 200 g (1 ½ cups)
  • Baking powder: 2 teaspoons
  • Unsalted butter: 100 g (½ cup), softened
  • Sugar: 200 g (1 cup)
  • Eggs: 2 large
  • Strong brewed coffee: 100 ml (about ⅓ cup), cooled
  • Walnuts: 100 g (1 cup), chopped
  • Vanilla extract: 1 teaspoon
  • Powdered sugar: 150 g (1 ½ cups)
  • Milk: 2 tablespoons

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare your cake pans.
  2. Sift together the all-purpose flour and baking powder in a medium bowl.
  3. Cream the softened unsalted butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the cooled coffee and vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients and mix on low speed until just combined.
  6. Fold in the chopped walnuts gently.
  7. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes.
  8. Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the frosting by mixing powdered sugar and milk until smooth.
  10. Assemble the cake by placing one layer on a serving plate, frosting it, and then adding the second layer and frosting the top and sides.
