A flavorful coconut chicken rice bowl that combines tender chicken with aromatic coconut rice.

- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 cup broccoli florets
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine rice and coconut milk. Add water to make up to 2 cups of liquid. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
- In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
- Add chicken to the skillet. Season with soy sauce, salt, and pepper. Cook until chicken is no longer pink.
- Add broccoli to the skillet and cook for an additional 3-4 minutes.
- Fluff the coconut rice with a fork and serve with the chicken and broccoli mixture.
- Garnish with fresh cilantro.

- Use brown rice for a healthier option.
- Adjust the amount of soy sauce for desired saltiness.
