  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice and coconut milk. Add water to make up to 2 cups of liquid. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  4. In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  5. Add chicken to the skillet. Season with soy sauce, salt, and pepper. Cook until chicken is no longer pink.
  6. Add broccoli to the skillet and cook for an additional 3-4 minutes.
  7. Fluff the coconut rice with a fork and serve with the chicken and broccoli mixture.
  8. Garnish with fresh cilantro.
