Description
A flavorful coconut curry chicken served with rice noodles.
Ingrédients

- 1 lb chicken breast, diced
- 1 can coconut milk (13.5 oz)
- 2 tablespoons curry paste
- 1 cup chicken broth
- 2 cups rice noodles
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the oil in a large pan over medium heat.
- Add the onion and garlic, sauté until soft.
- Add the chicken and cook until browned.
- Stir in the curry paste and cook for 1 minute.
- Add the coconut milk and chicken broth, bring to a simmer.
- Add the bell pepper and simmer for 10 minutes.
- Meanwhile, cook the rice noodles according to package instructions.
- Drain the noodles and serve topped with the curry.
- Garnish with fresh cilantro.
Notes
- Adjust the spice level by using more or less curry paste.
- Feel free to add vegetables like spinach or carrots.
- Can substitute chicken with tofu for a vegetarian option.
