Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the onion and garlic, sauté until soft.
  3. Add the chicken and cook until browned.
  4. Stir in the curry paste and cook for 1 minute.
  5. Add the coconut milk and chicken broth, bring to a simmer.
  6. Add the bell pepper and simmer for 10 minutes.
  7. Meanwhile, cook the rice noodles according to package instructions.
  8. Drain the noodles and serve topped with the curry.
  9. Garnish with fresh cilantro.
