- 1 9-inch pie crust
- 1 cup coconut milk
- 1 cup whole milk
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, whisk together coconut milk, whole milk, sugar, cornstarch, and salt over medium heat.
- Cook until the mixture thickens, stirring constantly.
- In a bowl, beat the eggs and gradually mix in the hot milk mixture.
- Add the vanilla extract and shredded coconut.
- Pour the filling into the prepared pie crust.
- Bake for 25-30 minutes or until set.
- Let cool before serving.
Notes
- Chill in the refrigerator for a few hours for best flavor.
- Top with whipped cream if desired.
