Description
Coconut mochi cake is a chewy and sweet dessert made with rice flour and coconut milk.

- 2 cups sweet rice flour
- 1 cup sugar
- 1 1/2 cups coconut milk
- 1/2 cup shredded coconut
- 1/4 cup melted butter
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix sweet rice flour, sugar, baking powder, and salt.
- Add coconut milk and melted butter to the dry ingredients. Mix until smooth.
- Fold in the shredded coconut.
- Pour the batter into a greased cake pan.
- Bake for 45-50 minutes or until the top is golden brown.
- Allow to cool before cutting into squares.
Notes
- Serve warm or at room temperature.
- Store leftovers in an airtight container.
- Can be topped with additional shredded coconut if desired.
