A selection of refreshing cold side dishes perfect for Thanksgiving.
Ingrédients

- 1 cup diced cucumber
- 2 cups shredded carrots
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/2 cup chopped red onion
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumber, carrots, cherry tomatoes, corn, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the vegetable mixture.
- Toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust seasoning to your taste.
- You can add other vegetables if desired.
