Cookies and cream cake is a rich and creamy dessert featuring layers of chocolate and vanilla flavors, topped with crushed cookies.

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup crushed chocolate sandwich cookies
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed chocolate sandwich cookies for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until combined.
- Stir in boiling water until the batter is smooth.
- Fold in crushed cookies.
- Pour batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Place one cake layer on a serving plate and spread a layer of whipped cream on top.
- Add the second cake layer and cover the top and sides with the remaining whipped cream.
- Sprinkle crushed cookies on top for decoration.
Notes
- Store leftovers in the refrigerator.
- Use any chocolate sandwich cookies for the recipe.
- This cake can be made a day in advance.
