Description

A popular appetizer inspired by Chili’s Southwest Egg Rolls.


Ingrédients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, canned or frozen
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green onions, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix the chicken, black beans, corn, red bell pepper, green onions, cheese, cumin, chili powder, and garlic powder.
  2. Lay an egg roll wrapper on a flat surface with a corner facing you.
  3. Add 2 tablespoons of the filling mixture to the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides and roll tightly.
  5. Seal the edges with a bit of water.
  6. Heat oil in a deep pan over medium heat.
  7. Fry the egg rolls until golden brown on all sides, about 3-4 minutes.
  8. Remove and drain on paper towels.
  9. Serve with your favorite dipping sauce.

Notes

  • Adjust the spice level by adding jalapeños.
  • These can be baked instead of fried for a healthier option.
  • Store leftovers in the fridge for up to 3 days.
