Description
A popular appetizer inspired by Chili’s Southwest Egg Rolls.
Ingrédients

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, canned or frozen
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix the chicken, black beans, corn, red bell pepper, green onions, cheese, cumin, chili powder, and garlic powder.
- Lay an egg roll wrapper on a flat surface with a corner facing you.
- Add 2 tablespoons of the filling mixture to the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly.
- Seal the edges with a bit of water.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls until golden brown on all sides, about 3-4 minutes.
- Remove and drain on paper towels.
- Serve with your favorite dipping sauce.
Notes
- Adjust the spice level by adding jalapeños.
- These can be baked instead of fried for a healthier option.
- Store leftovers in the fridge for up to 3 days.
