- 1 cup cottage cheese
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced

Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Sauté onion and bell pepper until soft.
- Add spinach and cook until wilted.
- In a bowl, whisk together eggs, cottage cheese, salt, and pepper.
- Add sautéed vegetables to the egg mixture.
- Pour the mixture into a greased baking dish.

- Bake for 30-35 minutes or until set.
