Description
A hearty cowboy meatloaf served with a creamy potato casserole.
Ingrédients

- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup ketchup
- 1/4 cup chopped onion
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 large potatoes, peeled and sliced
- 1 cup sour cream
- 1 cup shredded cheese
- 1/2 cup butter, melted
Instructions
- Preheat the oven to 350°F.
- In a bowl, mix beef, breadcrumbs, milk, ketchup, onion, egg, salt, and pepper.
- Shape the mixture into a loaf and place it in a baking dish.
- In another bowl, combine potatoes, sour cream, cheese, and butter.
- Spoon the potato mixture over the meatloaf.
- Bake for 1 hour or until the meat is cooked through.
Notes
- Let the meatloaf rest for 10 minutes before slicing.
- You can add vegetables to the potato mixture if desired.
