Ingrédients

  • 2 cups water
  • 1 apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine quinoa and water in a pot. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine diced apple, dried cranberries, walnuts, and feta cheese.
  7. Add cooled quinoa to the bowl.
  8. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  9. Pour the dressing over the salad and mix well.
  10. Serve chilled or at room temperature.
