  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, baking soda, salt, and cinnamon.
  3. Add cranberries and walnuts to the dry ingredients.
  4. In another bowl, whisk together oil, eggs, vanilla, and orange juice.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack.
