This is a recipe for the creamiest rice pudding you will ever make.


Ingrédients

  • 1 cup of Arborio rice
  • 4 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 2 large eggs
  • 1/4 cup of raisins (optional)

Instructions

  1. In a large saucepan, combine rice, milk, sugar, and salt.
  2. Bring to a boil over medium heat, stirring often.
  3. Reduce heat and let it simmer for about 20 minutes, stirring frequently.
  4. In a bowl, whisk the eggs and gradually add a cup of the hot rice mixture to temper the eggs.
  5. Stir the egg mixture back into the saucepan.
  6. Cook for another 5 minutes until thickened.
  7. Add vanilla extract, cinnamon, and raisins if using.
  8. Remove from heat and let it cool slightly before serving.

Notes

  • For a richer taste, try using half-and-half instead of milk.
  • Serve warm or chilled, as preferred.
