Description
This is a recipe for the creamiest rice pudding you will ever make.
Ingrédients

- 1 cup of Arborio rice
- 4 cups of whole milk
- 1/2 cup of granulated sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 2 large eggs
- 1/4 cup of raisins (optional)
Instructions
- In a large saucepan, combine rice, milk, sugar, and salt.
- Bring to a boil over medium heat, stirring often.
- Reduce heat and let it simmer for about 20 minutes, stirring frequently.
- In a bowl, whisk the eggs and gradually add a cup of the hot rice mixture to temper the eggs.
- Stir the egg mixture back into the saucepan.
- Cook for another 5 minutes until thickened.
- Add vanilla extract, cinnamon, and raisins if using.
- Remove from heat and let it cool slightly before serving.
Notes
- For a richer taste, try using half-and-half instead of milk.
- Serve warm or chilled, as preferred.
- Top with extra cinnamon or a dollop of whipped cream if desired.
