A creamy butterscotch cheesecake topped with a buttery crumble.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 cup butterscotch sauce
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add butterscotch sauce, eggs, vanilla extract, and salt. Mix until well combined.
- Stir in sour cream.
- Pour the batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let the cheesecake cool before removing from the pan.
- Top with extra butterscotch sauce and crumble before serving.
Notes
- Chill the cheesecake for at least 4 hours before serving.
- Store leftovers in the refrigerator.
