- 4 medium sweet potatoes
- 2 cups mushrooms, sliced
- 2 cups fresh spinach
- 1 cup cream cheese
- 1/2 cup shredded cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake sweet potatoes for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat.
- Add garlic and mushrooms, sauté until mushrooms are browned.
- Add spinach and cook until wilted.
- Stir in cream cheese and mix until smooth.
- Season with salt and pepper.
- Once sweet potatoes are done, slice them open and fluff the insides with a fork.
- Stuff the sweet potatoes with the creamy mushroom spinach mixture.
- Top with shredded cheese.
- Return to the oven for 5-10 minutes until cheese is melted.
