- 6 ripe tomatoes, halved
- 1 head of garlic
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the halved tomatoes and whole garlic head on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for 30 minutes.
- In a pot, sauté the chopped onion until translucent.
- Add the roasted tomatoes and garlic (squeezed out of its skin) to the pot.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in the heavy cream and heat through.
- Serve hot, garnished with fresh basil.
Notes
- For a vegan version, substitute heavy cream with coconut milk.
- Adjust the seasoning to your preference.
