Description
Creamy spinach mushroom lasagna is a delicious and comforting dish. It layers pasta with creamy spinach, mushrooms, and cheese.

- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cups marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are tender.
- Add spinach to the skillet, cook until wilted. Season with salt and pepper.
- In a bowl, mix ricotta cheese with half of the mozzarella and parmesan cheese.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the spinach and mushroom mix, and a layer of marinara sauce.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and parmesan on top.
- Bake for 30-35 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a gluten-free version, use gluten-free lasagna noodles.
- Feel free to add other vegetables like zucchini or bell peppers.
- Letting the lasagna sit helps it set.
