A refreshing creamy street corn pasta salad perfect for summer gatherings.
Ingrédients

- 8 oz pasta
- 2 cups corn, cooked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine corn, mayonnaise, sour cream, red onion, cilantro, chili powder, lime juice, salt, and pepper.
- Add the cooled pasta to the mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust seasoning to taste.
- Can be made a day in advance.
- Add more lime juice for extra tang.
