Ingrédients

- 2 cups vegetable broth
- 1 cup corn kernels
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup heavy cream
- 1 cup tortilla strips
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil and sauté the onion and garlic until soft.
- Add the corn, black beans, diced tomatoes, cumin, chili powder, and vegetable broth.
- Bring to a boil and then reduce heat, simmer for 15 minutes.
- Stir in the heavy cream and season with salt.
- Serve hot, topped with tortilla strips and cilantro.
Notes
- Adjust spices to your taste.
- For a spicier soup, add jalapeños.
- You can substitute heavy cream with coconut cream for a dairy-free option.
