Instructions
- Chop the hard-boiled eggs in a bowl.
- Add mayonnaise and Dijon mustard, mix well.
- Stir in celery, red onion, pickles, salt, and pepper.
- Add fresh parsley and mix until combined.
- Chill in the refrigerator for 30 minutes before serving.
