- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides.
- Brush the potato skins with olive oil and season with salt and pepper.
- Place the skins on a baking sheet, skin side up, and bake for 10 minutes.
- Flip the skins and bake for another 10 minutes until crispy.
- Remove from the oven and sprinkle cheese on top.
- Return to the oven for 5 minutes until the cheese melts.
- Serve with sour cream and green onions.

- Use the scooped potato flesh for mashed potatoes.
