Description
A comforting and creamy chicken parmesan soup made in a crock pot.
Ingrédients

- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup diced tomatoes
- 2 cups spinach, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Place the diced chicken in the crock pot.
- Add chicken broth, onion, garlic, diced tomatoes, and Italian seasoning.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Stir in heavy cream and parmesan cheese.
- Add chopped spinach and cook for an additional 30 minutes.
- Season with salt and pepper to taste.
Notes
- Can substitute chicken breast with thighs.
- Use low-sodium broth if preferred.
- Top with extra parmesan before serving.
