A comforting and creamy chicken parmesan soup made in a crock pot.


Ingrédients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup diced tomatoes
  • 2 cups spinach, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place the diced chicken in the crock pot.
  2. Add chicken broth, onion, garlic, diced tomatoes, and Italian seasoning.
  3. Cook on low for 6-7 hours or high for 3-4 hours.
  4. Stir in heavy cream and parmesan cheese.
  5. Add chopped spinach and cook for an additional 30 minutes.
  6. Season with salt and pepper to taste.

Notes

  • Can substitute chicken breast with thighs.
  • Use low-sodium broth if preferred.
  • Top with extra parmesan before serving.
