Description

Ingrédients

  • 2 pounds beef stew meat, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the beef stew meat on all sides.
  3. Transfer the meat to the crockpot.
  4. Add carrots, potatoes, onion, and garlic to the crockpot.
  5. In a bowl, mix beef broth, tomato paste, thyme, salt, and pepper.
  6. Pour the mixture over the ingredients in the crockpot.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Stir before serving and enjoy.

Notes

  • For thicker stew, mix 2 tablespoons of cornstarch with cold water and stir in 30 minutes before serving.
