- 6 cups vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced

- Salt and pepper to taste
- 2 bay leaves
- 1 tablespoon olive oil
Instructions
- Rinse the blackeyed peas and remove any debris.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Transfer the mixture to the crockpot.
- Add blackeyed peas, vegetable broth, cumin, paprika, bay leaves, salt, and pepper.
- Stir to combine.
- Cook on low for 6-8 hours or until peas are tender.
- Remove bay leaves before serving.

- Soak blackeyed peas overnight for faster cooking.
- Adjust seasoning to your taste.
