  • 2 cups beef broth
  • 1 onion, chopped

  • 3 potatoes, diced
  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Brown the chuck roast on all sides.
  3. Transfer the roast to the crockpot.
  4. Add beef broth, onion, carrots, potatoes, garlic, salt, pepper, and thyme.
  5. Cover and cook on low for 8 hours or high for 4 hours.
