- 3 pounds beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
Instructions
- Season the roast with salt, pepper, thyme, and rosemary.
- Place the roast in the crockpot.
- Add the chopped onions, garlic, carrots, and potatoes around the roast.
- Pour the beef broth over the roast and vegetables.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once done, shred the roast and mix with the vegetables before serving.
Notes
- For a thicker gravy, remove some liquid and thicken with cornstarch.
- Leftovers can be stored in the fridge for up to 3 days.
