A creamy and flavorful Thai coconut chicken soup made in a crockpot.
Ingrédients

- 1 lb chicken breast, diced
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup sliced mushrooms
- 1 red bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Place chicken, coconut milk, chicken broth, mushrooms, bell pepper, onion, garlic, curry paste, and fish sauce in the crockpot.
- Stir to combine all ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, stir in lime juice.
- Garnish with fresh cilantro.

- Adjust the level of curry paste to taste.
- Serve with rice or noodles for a complete meal.
