Description
A refreshing cold soup made with cucumbers and other fresh vegetables.
Ingrédients

- 4 cups cucumber, peeled and diced
- 1 cup ripe tomatoes, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- In a blender, combine cucumbers, tomatoes, bell pepper, red onion, and garlic.
- Add vegetable broth, olive oil, and red wine vinegar.
- Blend until smooth.
- Season with salt and pepper.
- Chill in the refrigerator for at least 2 hours before serving.

- Serve chilled for best flavor.
- Garnish with fresh herbs if desired.
