Description
A refreshing and nutritious curried chickpea salad.
Ingrédients

- 1 can chickpeas, drained and rinsed
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup raisins
- 1/4 cup chopped cilantro
- 1/4 cup plain yogurt
- 2 tablespoons curry powder
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cucumber, red onion, bell pepper, raisins, and cilantro.
- In a separate bowl, mix yogurt, curry powder, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other vegetables like carrots or tomatoes.
- Adjust seasoning to taste.
