  • 1 cup of chopped carrots
  • 1 tablespoon of fresh thyme
  • 1 tablespoon of lemon juice

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the green beans in olive oil, garlic powder, salt, and pepper.
  3. Spread the green beans on a baking sheet and roast for 15-20 minutes.
  4. In a pot, combine the mashed potatoes and vegetable broth. Stir until smooth.
  5. In another pot, steam the carrots until tender.
  6. Add thyme and lemon juice to the carrots and mix well.
  7. Serve the roasted green beans, mashed potatoes, and carrots together on a platter.
