Description
A hearty and flavorful beef stew made with tender meat and fresh vegetables.
Ingrédients

- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic to the pot, sauté until soft.
- Stir in tomato paste and cook for 1 minute.
- Add beef back to the pot with broth, thyme, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add carrots and potatoes, continue to simmer for another 30 minutes.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- For thicker stew, add a slurry of cornstarch and water.
- Can be made a day ahead for better flavor.
