Description

A hearty and flavorful beef stew made with tender meat and fresh vegetables.


Ingrédients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until soft.
  5. Stir in tomato paste and cook for 1 minute.
  6. Add beef back to the pot with broth, thyme, salt, pepper, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Add carrots and potatoes, continue to simmer for another 30 minutes.
  9. Remove bay leaf before serving.

Notes

  • Adjust seasoning to taste.
  • For thicker stew, add a slurry of cornstarch and water.
  • Can be made a day ahead for better flavor.
