  • 1 onion, chopped
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups of beef broth
  • 2 tablespoons of olive oil
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
  • 2 sprigs of thyme
  • 2 bay leaves

Instructions

  1. Heat olive oil in the Dutch oven over medium heat.
  2. Add beef chunks and brown on all sides.
  3. Remove the beef and set aside.
  4. Add onions and cook until translucent.
  5. Stir in carrots and potatoes.
  6. Return beef to the pot.
  7. Pour in beef broth and add seasonings.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 2 hours.
  10. Remove bay leaves and thyme before serving.

Notes

  • Adjust seasoning to taste.
  • Cook for longer for more tender beef.
  • Serve with crusty bread.
