- 4 bell peppers
- 1 cup cooked rice
- 1 cup black beans, drained
- 1 cup corn
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 370°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix rice, beans, corn, cheese, cumin, chili powder, salt, and pepper.
- Stuff the mixture into each bell pepper.
- Place the stuffed peppers in the air fryer basket.
- Cook for 12-15 minutes until the peppers are tender.
- Remove and let cool for a few minutes before serving.
